The truth about coconut oil
- Coconut oil is a medium-chained fatty acid (MCFA). The fatty acids in coconut oil are broken down and are sent directly to the liver, where they are predominately used for energy production and thus seldom end up as body fat or as deposits in arteries or anywhere else. They produce energy, not fat. MCFA do not have a negative effect on blood cholesterol and help protect against heart disease.
- Coconut oil, being a highly saturated fat, is the least venerable of all the dietary oils to oxidation and free-radical formation and therefore is the safest to use in cooking.
- Coconut oil is composed of 48 percent lauric acid which is a strong antimicrobial. Lauric acid can kill lipid-coated bacteria but does not appear to harm the friendly intestinal bacteria. - 7 ounces fresh coconut meat (about half a coconut)
- 2 ¾ cups dried, shredded coconut
- 10 ounces coconut milk
